Barfi is another classic, it is a melt in the mouth sweet with similarities to fudge. This version is plain white barfi which is made with milk, milk powder, sugar and flavourings. The end result is similar to that found in indian sweet shops or halwai.
Good barfi should be flaky and crumbly when eaten rather than smooth.
